Tell us a little bit about Pizza’zza?
Since 2003, Pizza’zza has been hand-tossing artisan New York style pizza and serving it to hungry Bellinghamsters. Deeply rooted in community, owners Will Annett and Erica Lamson source products from over 40 local growers in the four-county region of Whatcom, Skagit, Island and San Juan counties, resulting in nearly 80% of Pizza’zza’s food dollar being spent locally. These local growers and producers include Ferndale Farmstead in Whatcom County, who supplies 100% of Pizza’zza’s pizza cheese, and Cairnspring Mills in Skagit County, who supplies 100% of the flour used in every pizza crust.
Pizza’zza Mobile (food truck) launched in 2016. Committed to local, the trailer was custom built in Ferndale and features a Bellingham-built wood stone oven. After vending for a spell, Pizza’zza discovered that their real love was wedding catering. Now, the food truck is used almost exclusively as a mobile kitchen for full-service catering.
What type of catering do you provide for weddings?
We use our food truck as a mobile kitchen. Because we are completely self-contained, we can set up and cook onsite anywhere. We’ve even set up in the middle of a corn field. While we cook on the food truck, we serve at buffet tables within the venue, or wherever our clients would like them placed. We have a fast service style that is well-suited for larger guest counts. We can serve 100 people every 15 minutes.
Our packages are comprehensive, which is a convenience and a cost-savings to our customers. Each package comes with buffet tables, buffet linens, serving ware, white porcelain plates, stainless flatware, glassware (for beverage packages), and all service staff.
While pizza is our core package, we offer beautiful appetizer spreads, salads, desserts (famous ice cream sandwiches), wine and beer service, and non-alcoholic beverages.
What is unique about your catering?
Our inclusive pricing structure is unique. We think this simplifies things for our customers.
Our service is very quick. We can have a group of 200 people served in 30 minutes.
Our pizza and salad buffet is unlimited. We continue making pizzas until everyone is finished.
We don’t put time limits on when we are there. We simply show up in plenty of time to have the buffet tables set up before guests arrive and leave when everyone has had plenty to eat. Simple.
Our bar service is unique in that we both provide the alcohol and serve it (and handle everything in between, including glassware and non-alcoholic beverages). We also don't place a tip jar out on the bar. We thinks guests should enjoy being guests and not feel obligated by a tip jar.

What is your favorite part of catering for weddings?
Our favorite part of catering weddings is the joy. There is simply so much JOY at weddings. We also really enjoy the pre-event hustle and bustle of set-up, the buzz and laughter of the crowd during the reception, cooking for and feeding guests delicious, locally sourced food that they love, and the satisfied exhaustion at the end of the day!
What is the best wedding memory from Pizza’zza catering?
Oh my goodness. There are many. I think my favorite was one of the very first weddings we did. The couple had purchased a catering package as part of our crowd-funding campaign that helped launch our food truck. Their names are on the back of the food truck. It was a fabulous moment to watch our dream come full circle. There is also a pretty sweet photo of them feeding each other our ice cream sandwiches.
